I just read Super processing personI suggest Chris Van Tulleken tells about the large amount of processed foods in our modern diet. I always know obvious processing, such as turning wheat into white flour by removing bacteria and bran, and then grinding the rest. But the author further emphasizes that it sounds more like it comes out of test tubes in our food than in gardens such as xanthan gum or mono-triglycerides. Highly processed foods have three main effects, the first is to remove nutrients such as wheat germ, and the second is a “preventive agent” such as grinding fruits in smoothies to destroy cell walls. The third is additives. I always think the first two are more important, which is why brown rice prefers white rice or apple juice than white. But the authors provide compelling evidence that additives are not good for us either. He also traces the history of large food companies like Nestlé that recently opened up a new market in Brazil and how this has led to a significant increase in population obesity.

Unless you are a good chef and can prepare most of your meals from scratch, it’s hard to completely eliminate your diet. But it is absolutely possible to reduce it. A large contribution of overprocessed foods in my diet is “snacks”, such as cookies or candies, which I can definitely try to eat less of them more disciplinedly. In addition, there are some commercial foods such as “boutique” branded commercial foods, such as soups and chili, which have higher quality ingredients and fewer additives. These can be eaten directly or used as the beginning of a stew or casserole. Boutique brands are more expensive, but I save less snacks to make up for the difference. Reading this book inspired me to work harder to take such measures.
